You can use the Mechanic to trade in your cars. The Mechanic appears when you reach the 3rd career level. Tap Home - Mechanic - Trade car - Select Car - Trade In.

You will get cash and a bonus item depending on the car you sell. Be careful: once you sell a car, you can't get it back!
